Organic Butternut Squash, Pumpkin Seed & Coconut Salad

Raw Butternut Squash Salad
This is a really refreshing salad. The taste is very delicate and I think would be a great starter for a summer meal.
My intentions were to use parsnips, but I changed my mind as I think it would have overpowered the other flavours.

Ingredient list
- 1 Organic Butternut Squash
- 1 Organic Pink Lady or Royal Gala apple
- 1/2 Organic onion grated (small & sweet)
- 3 Tablespoons finely chopped Organic Curly Leaf Parsley
- 1 tablespoon Organic aged white
wine vinegar
- 1 tablespoon Organic Canola oil
- Real Salt (1/4 teaspoon or to taste) Note: Any unrefined sea salt, but I love the colour of the pink.
- Serve with raw pumpkin & sunflower seeds and unsweetened coconut.

Instructions
- Peel, core and grate the butternut squash and apple.
- Grate 1/2 a small sweet onion .
- Finely chop 3 tablespoons of curly leaf parsley
- Combine ingredients in a large glass or ceramic bowl (not metal)
- Add oil & vinegar (1 tablespoon each or to taste)
- Add real salt (unrefined sea salt)
Serve topped with raw pumpkin & sunflower seeds and unsweetened coconut.
